The Toffee Shop

Penrith Toffee shop exterior by Graeme DougalThe Toffee Shop, at Penrith, is a traditional family business. Started after World War I by the Furnass family, its ownership has passed through only three families. The present owners, Pat and Neil Boustad, use the traditional recipes first employed by the Furnass family. The candy is made in the back of the shop in copper pots in the same small amounts that you would make in a home kitchen.

The fudge ingredients are butter, sugar and milk while the toffee uses butter, sugar and syrup or black treacle. The pieces are broken up with a hammer and wrapped by hand. The toffe comes in two flavours: treacle and butter. Butter, chocolate and mint are the three fudge flavours. The fudge is described by the owners as being less sweet than standard fudge, and they quote Lord Lichfield as saying it is the best fudge in the world.
